Stuffed Zucchini

Italian style baked zucchini
stuffed with meat, veggies, and cheese.

45 minutes (oven time) 

3 zucchini
1 lb pork sausage
1 cup dry breadcrumbs
1 clove garlic
6 button mushrooms chopped
32 oz spaghetti sauce
1/2 cup grated Parmesan cheese
1/2 cup mozzarella cheese

Preheat oven to 350 degrees.
Slice zucchini lengthwise, scoop out seeds.
Mix in bowl sausage, bread crumbs, garlic, mushrooms, and Parmesan.
Stuff squash with mixture and place in 9 x 13 slightly oiled baking pan.
Pour sauce over squash and cover pan with foil.
Bake in oven for 45 mins. 
Remove foil and cover squash with mozzarella. 
Bake until cheese is melted.
